Both Online and server are the premium products by Tableau. And both help you publish your report and share it with others.

In a single line-

1. Tableau Server- On-premise & Public cloud

2. Tableau Online- Fully hosted and managed by Tableau

So, usually, if you have to keep your reports on intranet and managed by your company use Tableau server. And if you want to make it on the internet and allow Tableau to take care of infrastructure, Tableau online is the right product for you.
